A flow control paddle is normally something you add to a machine, or something that arrives bolted to a two-thousand-dollar body. The Pop Up has one on the group, on a machine sized for a normal kitchen.

How it works

The paddle lets you change water flow through the puck while the shot runs — start soft to wet the coffee evenly, open up for the body, ease off at the end. A PID holds the brew temperature you set on an insulated brass boiler, so the flow is the variable you are playing with rather than a second unknown. Single boiler, reservoir fed, vibratory pump.

Who it suits

A good fit if you already pull decent shots and want to start profiling, you enjoy adjusting things mid-shot, and you are working with light or unusual roasts that a fixed pressure curve flattens.

Consider another machine if you want to press one button and walk away — the paddle is the point of this machine, and ignoring it means paying for something you will not use.
